Self conversion insurance

Hi Me and my boyfriend are in the process of converting our LDV minibus into a camper. We have a friend who is happy to give us an engineers certificate to say that we have done it to a suitable standard but we are strugling to find a decent insurance policy (we’re heading round europe in the new year). Also we’re both young drivers (I’m 24 and Toms 23 (he’s only been driving 6 months as well)) I know it’s a long shot but any suggestions?
