What is the best way to go about doing this? Gas boiler or solar panels or electric heating?
Is there anywhere that sells bespoke stuff for camper conversions?

  1. Gas boiler is the easiest way
Gas boiler is the easiest way for warm water. Fairly easy to fit, if you know about gas and water plumbing. Run it off a separate, or existing gas bottle.

Electric will use lots and lots of power, so you’ll need a generator or campsite power supply. Not really possible with leisure batteries.

Solar would be expensive and heavy. Although I have seen someone with a load of black hosepipe laid on a condensed fashion on the roof of the van. The shower water was drawn through the pipe, so it got hot on sunny days. Only holds so much water though.

Solar showers are also very easy, although hardy a power shower!
