Well....
It all depends on the vehicle, your time and budget, but I would:
Do all structural changes first, so an not to damaged any finished items.
1. So put in the base electrics (wires, relays)
2. Poptop roof
3. Windows
4. Respray
5. Insulate and line the inside
6. Fit the interior, finishing the electrics
7. Then finish the exterior decoration.

Hi all
What order would you people do the items required on a self build and how long would you reckon each item would take to install?
Some bits are obvious like do soft furnishings last, do the insulation and walls first, but what about all that in between - electrics, windows, respray / external decoration, poptop roof, etc?
